Beet Burgers

I had the most amazing beet and black bean burger over the Christmas holiday at a microbrewery* in Chicago. I’ve been dying to recreate it ever since my last bite, so after finally getting a new food processor I was able to give it a go.

*Side note: I love eating at microbrews! I find them to consistently be the most vegan, gluten free, or alternative diet friendly restaurants that I visit. And it’s even better when they make their own hard ciders on premise as well as beer 🍻.


Earthy and dense, the beets, beans, and shrooms give these burgers a fabulous texture that is scrumptiously satisfying. When served with vegan slaw and a hard cider, it makes for the perfect meal.


πŸ” 3 medium size beets

πŸ”Β 1 cup walnuts

πŸ”Β 1 cup choppedΒ baby bella mushrooms

πŸ” 1/2 cup chopped red onion

πŸ” 1 1/2 tbsp minced garlic

πŸ”Β 15oz can black beans, rinsed and drained

πŸ” 1/2 cup flaxseed meal

πŸ” 1+ cup quick cooking oatmeal

πŸ”Β 1 tbsp smoked paprika

πŸ”Β 1/2 tsp cumin

πŸ” salt and pepper

Roast the beets by placing them on an oiled baking sheet in a 400Β° preheated oven. Turning occasionally, roast them for 30-40 minutes, the beets are done when theyΒ are tender all the way to the center. When they are cool enough to handle, peel the beets, chop them into smaller pieces, and set aside.Β 

Meanwhile, toast the walnuts in a pan over medium heat until they are fragrant and then let cool. When the toasted nuts are completely cooled, process them into walnut meal in a food processor.

Add the beets, beans, mushrooms, onions, garlic, spices, flaxseed meal, oatmeal and process until mostly smooth. If the mixture is too wet add additional oatmeal, you are seeking a firm enough texture so that the burger will hold together in the pan.

Hand shape each burger with 1/4 cup of the mix. In a skillet over medium heat add 1-2 tablespoons of oil and fry the burgers 6 minutes, or until browned, on each side. Serve with garlic aioli between bread, buns or over a salad. I topped my burger with arugula, sliced avocado, and red onion rings.Β

Combine all ingredients well.
